Many people who lead hectic lives have learned that it’s just as easy to cook a lot of food at once and save it to eat throughout the week as it is to prepare a small meal, and therefore spend a portion of their Sunday afternoons cooking food to eat throughout the week. If you are wondering what types of meals you can prepare during a Sunday afternoon that will hold up in your french door fridge throughout the week, here are a few ideas that you can use for inspiration.

Smoked Salmon Pasta

This may sound like a complicated dish to prepare, but it’s really quite easy. All that you need to do is make a white sauce that you can store in the refrigerator until you are ready to use it. On the evening that you want to eat this particular dinner, all you have to do is heat the sauce, cook the pasta and stir in the smoked salmon. You could also make a double portion of this dinner for a Sunday evening and put the rest in the refrigerator to microwave on another night.

Tuna Casserole

Tuna casserole is another great dish that heats us easily as leftovers and holds up well for several days in the refrigerator. If you prefer salmon over tuna, you can easily substitute canned salmon. This works well when paired with a simple green salad and a dinner role, but those who are watching calories can easily leave the dinner role out.

Chicken Salad

A well-prepared chicken salad served cold is an excellent mealtime option for warm spring and summer evenings. This can be quickly prepared on a Sunday afternoon and place in the refrigerator for later consumption. The addition of black sesame seeds to chicken salad adds an exquisite accent.

Crockpot Potato Soup

Putting a few basic ingredients into a crockpot on a Sunday morning will result in a delicious soup within eight hours. Potatoes, chicken broth, cream of mushroom soup, green onions, chopped bacon, minced garlic and freshly ground pepper make up the base of this soup, and sour cream and creamed cheese are mixed in when it is almost finished. This soup is hearty enough to make an excellent dinner in its own right when paired with a fresh green salad and garlic bread.

Lasagne

This old standby is a regular in many homes and can easily be heated up and served with salad for a quick and easy weekday dinner. But did you know that you could also prepare lasagne in a crock pot? It’s very tasty this way because the meat and sauce benefit greatly from the slow cooking process, and the end result holds up nicely in the refrigerator.
